How to make Vegan, GF Dumpling stew

I never use recipes and I’m a Gluten Free, Vegan so my cooking is always experimental.  I love using spices, especially, Paprika and Turmeric.  Here I am making a family favourite of vegetable stew and gluten free dumplings.

 

Vegan stew recipe

1 x red onion chopped

2  desert spoons of coconut oil

2 medium size sweat potato

2 cup washed red lentils

1 x leek washed and chopped

½ medium cauliflour chopped into florets

1 tsp turmeric

1 dst spoon lazy garlic

1 dst spoon whole grain mustard

1 tsp lazy chilli

1 tsp mixed spice

1 tsp black pepper

1 tsp salt

1 tsp paprika

1 organic, gluten free vegetable stock cube.

Carton organic chopped  tomatoes

Small tin red kidney beans in chilli sauce

Boiling water for liquid to cover generously

Dumplings

3 cups approximately Gluten free flour

½ cup of vegetable suet

water to soften as needed, add slowly

pinch of salt

simmer for about half an hour .

    I know you don’t follow recipes, but would you consider posting a list of ingredients by way of summary. A sort of recipe lite, if you will?!

    I might just add these to my next shopping list!!
